Red wine – Dry grapes (Raisins) wine recipe ๐Ÿท ๐Ÿ‡

Things you need other than ingredients

  • Bharani (clay pot, เดญเดฐเดฃเดฟ ) – which can accommodate at least 7 litres
  • Wooden spoon (เดคเดตเดฟ – เดชเตเดคเดฟเดฏเดคเต)
  • Strainer (เด…เดฐเดฟเดชเตเดช) – need only in last step when draining the wine

Wash all the above items in a boiled and cooled water and sun dry all item. เดŽเดฒเตเดฒเดพเด‚ เดธเดพเดงเดจเด•เดณเตเด‚ เดคเดฟเดณเดชเตเดชเดฟเดšเตเดšเดพเดฑเตเดฑเดฟเดฏ เดตเต†เดณเตเดณเดคเตเดคเดฟเตฝ เด•เดดเตเด•เดฟ เดตเต†เดฏเดฟเดฒเดคเตเดคเต เดตเต†เดšเตเดšเต เด‰เดฃเด•เตเด•เดฃเด‚.

Ingredients

  • 1 kg raisins ( เด‰เดฃเด•เตเด• เดฎเตเดจเตเดคเดฟเดฐเดฟ ) – red is better, green is not that tasty and color will be yellowish.
  • 2 kgs sugar (2 kgs will be too sweet for some โ€“ so you can use 1.5kg sugar and later add if needed.)
  • 5 litres water (boiled and cooled) – เดคเดฟเดณเดชเตเดชเดฟเดšเตเดšเดพเดฑเตเดฑเดฟเดฏ เดตเต†เดณเตเดณเด‚, water should be cooled to room temperature (lukewarm water is best). If water is too hot it will kill the yeast.
  • 1 handful wheat (whole wheat) เด—เต‹เดคเดฎเตเดชเต เดฎเดฃเดฟ
  • 1 tsp dry yeast
  • 2 inch cinnamon sticks, broken into small pieces เด•เดฑเตเด• เดชเดŸเตเดŸ
  • 2 cloves เด—เตเดฐเดพเดฎเตเดชเต  (for flavoring )

Cut each raisin into 2-3 pieces based on the size of raisin (DO IT its worth the effort)
Put all above ingredients a bharani.
Stir the ingredients with wooden spoon.
Close the bharani with lid, lid should not be too tight.

On 10th and 17th day

Open lid, stir and crush the ingredients on 10th and 17th day with the wooden spoon.

On 17th day taste little bit of wine and check sugar, if you want more sugar add more sugar. But make sure you don’t add more than 250 grams of sugar.

24th day

Now open lid on 24th day. Drain wine into a glass bottle, discard the sediments (raisins, wheat, cinnamon sticks etc). You can drain the wine using a wooden spoon and separator (similar to a tea separator – เด…เดฐเดฟเดชเตเดช ).

I use a hose to siphon (the level hose which you get from any hardware shop-see below image). Siphon wine from bharani to a glass bottle so the sediments and wine are not mixed.

And your wine is ready

Tip 1: Keep the bottles intact for 5 to 7 days so small particles in wine will accumulate at the bottom and this will make the wine clear.

Tip 2: Add 1.5 egg white to the wine on the second day. This is to make the wine clear, and it will not alter the wine taste. Egg white is rich in albumen which act as a fining agent. If you are not comfortable adding egg white leave it, this is not important.

Tip 3: Use only glass and wooden item, never use steel or plastic items.
